Raw honey

A lovely honey stall at the Fairfield Farmers market. I tasted most of the honey's and decided to go for the Stringybark, it was closely contested by their most popular honey the Blue Manna gum. Most of the honeys were from eucalypts other than orange blossom variety which was from orange (citrus) flowers. I learnt that raw honey is runny when really fresh and becomes crystalised and hard a little later and Manuka honey is actually a New Zealand trademark variety of tea tree honey and in Australia it will only be called tea tree.
