Raw hummingbird cake with rough leaf pinneapple

This cake was dedicated to love and to life and the passing of a dear
friends mama.
It was my first go at creating a raw food version of hummingbird cake.

Base

Dates soaked in lemon juice and a little water
A spoon of coconut oil
Organic Dessicated coconut
That was it?

Filling
-
Flesh of half a rough leaf pineapple and
A banana mooshed up I used a knife and my hands but you could use a
blender
A few spoons of white chia seed
Left to gel up for half an hour
And a spoon of coconut oil for extra firmness.

I took it along to an Opa! gig, complete with floral grandma plate and
bone knife, and shared it amongst the wild gypsy dancing.

Zucc cut into 'fettacini' strips
Marinated in lemon juice, salt and olive oil for half hour

A pesto
A dozen hazelnuts
A few good handfuls of sweet basil
1/4 purple salad onion
Salt, lemon juice
Half an avocado

A sliced mushroom and a few sundried tomatoes mixed through the pasta
with the pesto
Topped with fresh tomatoes and torn basil

Seriously love pie

Possibly one of the most intensely love infused dishes I have ever made and eaten. This was a very special pie. I didn't have a blender or mortar and pestle so everything was prepared with a knife and crushed between my fingers.

tiniest bit of incredible vanilla infused honey

Wonder love pie

The crust was described below, and as for the filling, I think it was something like
a cup of soaked almonds with the skins peeled off
flesh of a young Thai coconut
a few spoons of coconut butter
a packet of frozen mixed berries
salt, and was that all?
Love! Forgiveness and gratitude!

Blueberry chia Ginger walnut cake pie tart

hard to do justice to the magnifique of colours, orange, purple and fluro green. Blueberrycjia pie.

Time for another pie

biodynamic almonds
walnuts

lots of ground Ginger
cinnamon
lemon juice
tablespoon coconut butter
almond meal

300g frozen blueberries crushed and mixed with 5-6 spoons of chia seed and left to soak just in the juice of the fruit. I added a little water after a while. The chia acts like a coagulant and gooey ally, and the berry juice helps soften the chia.
Moniter how much liquid is added so that it holds together nicely without being too gooey and so that it is gooey enough. Haha. Add some chopped green apple
